Ingredients

  • Quinoa (boiled) – 1 glass
  • Feta - 100 g
  • Eggplant (medium) – 2 pieces
  • Greenery - a couple of twigs
  • Garlic - 2 cloves
  • Vegetable oil - 50 ml
  • Ground black pepper - to taste
  • Salt - to taste

Step-by-step cooking recipe

Cut eggplants into cubes and soak in salted water for 15 minutes.

Drain the water and dry the eggplants on a paper towel.

Heat the oil in a frying pan, pour in the eggplant and fry until tender.

Wash the greens, shake them off and chop them finely.

Mix boiled quinoa, fried eggplant, herbs, salt and ground pepper.

Add the crumbled feta, garlic passed through the press and mix.
