In most recipes, fried onions are not added to carrots by filtering hot oil through a sieve. I tried to break this rule and got another delicious snack option. In my opinion, crispy onion slices only make it tastier.
Ingredients
- Carrots - 500 g
- Onion - 1 piece
- Hot red pepper - 1 pod
- Garlic - 3 cloves
- Vegetable oil - 40 ml
- Apple cider vinegar - 1,5 tbsp.l.
- Ground coriander - 0,5 tsp.
- Ground black pepper - 0,5 tsp.
- Sugar - 1 tsp.
- Salt - to taste
Step-by-step cooking recipe
Peel the carrots and grate them on a special grater.
Add salt, sugar, spices and mix. Cover with a lid and set aside for half an hour.
Chop the hot pepper and peeled onion.
Fry the onion in oil until transparent.
Add hot pepper, mix and immediately pour everything into a bowl with carrots.
Add vinegar, garlic passed through the press and mix well again. Cover with cling film or lid and refrigerate for 1.5-2 hours.
