- Salad mix - 200 g
- Parmesan - 100 g
- White bread - 3 slices

Cut the white bread into cubes and dry it in a dry frying pan.
Put the salad mix, crackers and parmesan on a plate. Season to taste.
Beat butter with lemon juice, mustard, salt and sugar with a mixer.
Add the yolk to the same place and continue whipping until the mayonnaise thickens.
Pour mayonnaise over the salad.
