Wash the tomatoes, make a cross-shaped incision on the skin, put them in boiling water for 1-2 minutes. Then peel, remove the middle and cut into medium cubes.
Peel the onion, finely chop. Saute in preheated olive oil until golden brown.
Add chopped tomatoes to the browned onion. Simmer over medium heat until the slicing releases the juice.
Add salt and pepper to the mass and add a little water. If there is a pronounced sourness, then add sugar to taste. If desired, you can also add garlic, basil, oregano or other favorite spices.
Simmer for 10 minutes.
Pour the finished tomato mass into the bowl of a blender and puree until smooth.
