You can argue for a long time whether borscht remains borscht without beetroot. But why, if it's much nicer to just enjoy the taste of your favorite first course? Just keep in mind that the color predictably will not be so bright and saturated, and depends mainly on the tomato.

Step-by-step cooking recipe
Boil the pork until tender over low heat. Add the chopped potatoes and cook for 10-15 minutes.
Chop the onion, grate the carrots, chop the peeled tomatoes. Chop the cabbage.
Fry the onion and carrot until soft. Add the tomato and tomato paste, stir and simmer for 5 minutes.
Send the cabbage and the rest of the vegetables to the borscht, season and cook for another 15 minutes.
