No matter how generous the feast, there should always be a few light dishes. For example, you can serve this simple carrot salad. Vegetarians and anyone who watches the figure will like it. Garlic can be replaced with ground ginger.

Ingredients

  • Carrots (juicy) – 300 g
  • Prunes (without a bone) – 5 pieces
  • Orange (medium) – 1 piece
  • Onion - 1 piece
  • Garlic - 2 clove
  • Nuts (any) – handful
  • Vegetable oil - 3 tbsp.l.
  • Lemon juice - 1 tbsp.l.
  • Ground black pepper - to taste
  • Salt - to taste

Step-by-step cooking recipe

Peel the carrots and grate them on a special grater.

Wash the prunes with boiling water and put them on a paper towel to dry.

Cut the prunes into small pieces.

Dry the nuts in a frying pan and chop them slightly.

Peel and slice the orange and onion.

Heat the oil in a frying pan, add the onion and fry until golden brown.

Pour the hot oil into the carrots, straining through an iron strainer.

Add prunes, nuts, orange and garlic passed through the press.

Add salt, pepper and lemon juice. Stir the salad and put it in the refrigerator for 40-60 minutes.
