Diet and PP are not a reason to deny yourself gastronomic pleasures. I will tell you an interesting recipe, which, perhaps, you did not know about. So, today we are preparing Georgian kharcho soup without meat - lean and less fatty, but just as spicy and fragrant.
Ingredients
- Water - 1,5 l
- Fig - 100 g
- Potatoes - 2 pcs.
- Carrots - 1 pcs.
- Tomatoes (in its own juice) – 400 g
- Onion - 1 pcs.
- Garlic - 4 cloves
- Cilantro - 0,5 beam
- Walnuts - 50 g
- Vegetable oil - 4 art.l.
- Bay leaf - 1 pcs.
- Salt - to taste
- Hop-suneli - 1 tsp.
- Ground coriander - 0,5 tsp.
- Ground black pepper - 0,5 tsp.
- Ground red pepper - 0,5 tsp.
Step-by-step cooking recipe
Rinse the rice under running water. Peel the potatoes and cut into cubes, finely chop the onion, grate the carrots on a coarse grater.
Fry the onion on half a serving of preheated vegetable oil, then add the carrots and saute for 3-5 minutes until soft.
Boil water in a saucepan, add the roast, rice, potatoes and bay leaf. Boil the soup over low heat for 10-15 minutes.
Heat the remaining half of the vegetable oil in a frying pan, add spices and tomatoes mashed with a fork in their own juice. Mix well and simmer for 5-7 minutes, then send it to a saucepan with soup, add salt to taste and cook the kharcho for another 5-10 minutes on low heat.
Chop the nuts, garlic and cilantro and add them to the soup pot. Remove the ready-made lean kharcho from the heat and let it brew under the lid for 10-15 minutes before serving.
