Eggplant is a rather original and not the most common filling for meat rolls. However, they go well with tender turkey. Especially if you add some more vegetables and mushrooms. Just lick your fingers!
Ingredients
- Turkey Breast - 500 g
- Eggplant - 1 piece
- Carrots - 2 pieces
- Greenery - 0.5 beam
- Garlic - 5 teeth
- Spices and seasonings - 2 tbsp.l.
Step-by-step cooking recipe
Cut the eggplant into plates, add salt and leave for 5 minutes.
Rinse the eggplants lightly and fry on both sides in a frying pan or grill.
Cut the carrots with the same plates. Chop the herbs with garlic.
Beat off the turkey breast and spread it out in a layer. Sprinkle with spices, garlic and herbs.
Lay out the plates of vegetables, roll up a tight roll and wrap it in foil.
Bake the roll in the oven at 180 degrees for about 45 minutes.
