Finely chop the onion, grate the carrots on a coarse grater and fry in olive oil until golden.
Cut the pork so as to unfold it in a thin layer. Lightly beat and sprinkle with spices to taste.
Put the roast on top and sprinkle with chopped nuts.
Roll up a tight roll and tie it with twine.
Bake pork in the oven for 2 hours at 160 degrees, and then another 30 minutes at 200 degrees for a golden crust.
