Remove the heads and tails, and completely clean the carcasses. If desired, cut into fillets.
Rub the fish with salt and pepper, drizzle with olive oil and place on parchment.
Place lemon slices and coarsely chopped rosemary and parsley on top.
Bake the mackerel for 35-40 minutes at 180 degrees. The fillet is baked for about 25 minutes.
