Risotto with shrimp, creamy taste and the smell of aromatic seasonings, is ideal as a main dish on a festive table. It can also be prepared on a normal day and make an ordinary lunch or dinner unique.

Start by making broth. To do this, separate the shells from the shrimp and fry them until red. Then pour 1.5 liters of water and cook until boiling. When the broth boils, strain it and leave it to make risotto.

Fry finely chopped garlic in a frying pan, throw shrimp to it and fry on each side for 2 minutes. We put them on a plate, we will use them at the very end.

Peel the onion, chop it finely. Pour olive oil into a frying pan and fry the onion until golden brown.

Add the rice and mix it well with the onion. Add the wine and evaporate, stirring constantly. Once the wine has evaporated, add the broth and cook the rice. We cook the risotto for about 20 minutes until the rice is fully cooked.

As soon as all the liquid has evaporated, add salt and spices to taste, do not forget about saffron. Mix well, pour in the shrimp and close the lid. Remove from the heat and let stand under the lid for 5 minutes.

When serving, sprinkle the risotto with freshly cut basil and grated Parmesan. If you don't have parmesan, you can use any hard cheese.
