Once it was a recipe for Italian vegetable soup, but I turned it into a full-fledged pea soup by changing the proportions of the ingredients. And I didn't regret it at all – it turns out so tasty and interesting. Tomato paste gives a beautiful red hue to the dish.
Ingredients
- Chicken - 300 g
- Peas (green) – 300 g
- Potatoes - 3 pieces
- Onion - 1 piece
- Carrots - 1 shtuaka
- Bell pepper - 1 piece
- Tomatoes - 1 piece
- Zucchini - 1 piece
- Tomato paste - 1 tbsp.l.
- Spinach (or other greens) – 60 g
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Boil the chicken until tender, remove and slice. Return it to the soup before serving.
Chop all the vegetables. Add potatoes to the boiling broth and cook for 10 minutes.
Add all the other vegetables and cook for another 5-7 minutes.
Add the peas, tomato paste and chopped spinach, season, boil for another 3-5 minutes and remove the soup from the heat.
