Wash the beef, cut it into small pieces and put it in a saucepan.
Add the beans, bay leaf, pour in water and cook for 1.5 hours over low heat.
Heat the oil in a frying pan, add the carrots, onions and fry until golden brown.
Add tomatoes, a couple of spoonfuls of broth from the pan and simmer for 5-7 minutes.
Pour the roast into the pan with the meat and continue cooking for another 10 minutes.
Add salt, pepper, turn off and leave to infuse under the lid for 15 minutes.
When serving, add a little fresh parsley to the plate.
