I have several recipes for carrot puree soups, and this is one of the best. Perhaps this is the most win-win option to start getting acquainted with such dishes. When serving, I advise you to decorate it with herbs and pesto sauce.
Ingredients
- Carrots - 700 g
- Tomatoes - 2 pieces
- Onion - 2 pieces
- Spices and seasonings - 1 tsp.
- Italian herbs - 1 tsp.
- Olive oil - 2 tbsp.l.
Step-by-step cooking recipe
Cut the onion and tomatoes into medium pieces and fry in olive oil.
Peel the tomatoes and chop them in a blender. Pour over the vegetables.
Simmer everything together for a couple of minutes, add water and cook until the carrots are soft.
Puree the soup with a blender and add spices to taste.
