Do you want to cook a delicious vegetable salad for the winter, but you are already tired of all the usual recipes? I suggest you try something new: asparagus bean salad. With the addition of garlic and hot pepper, it turns out delicious, moderately spicy and fragrant.
Ingredients
- String beans - 1 kg
- Tomatoes - 300 g
- Onion - 300 g
- Hot red pepper - half a string
- Greenery (any) – 20 g
- Garlic - 50 g
- Vegetable oil (odorless) – 80 ml
- Black Pepper - 5 peas
- Coriander - 0,5 tsp.
- Vinegar - 80 ml
- Sugar - 50 g
- Salt - 60 g
- Water - 3 l
Step-by-step cooking recipe
Cut the hard edges from the asparagus beans, cut the pods into small pieces.
Pour into boiling water, boil for 5 minutes and flip into a colander.
Chop tomatoes, hot pepper, peeled garlic and onion.
Fry the onion in oil until transparent.
Add hot pepper, tomatoes and simmer for 10 minutes, stirring occasionally.
Add boiled asparagus beans, spices, sugar, salt, chopped garlic and herbs.
Boil for 20 minutes, pour in the vinegar and immediately remove from heat.
Spread out on clean dry jars, roll up, turn upside down and wrap up for a day with a warm blanket.
