It is difficult to find a person in the post-Soviet space who would not try olivier. And everyone has their own perfect recipe to taste. Today I propose to cook a favorite salad with quail eggs. Given their small size, you will have to use at least 10 pieces.
Ingredients
- Boiled sausage (doctoral) – 250 g
- Potatoes (boiled) – 200 g
- Carrots (boiled) – 2 pieces
- Green peas (canned) – 150 g
- Quail eggs (boiled) – 10 pieces
- Cucumbers (salty) – 250 g
- Mayonnaise - 250 ml
- Olives (for decoration) – handful
- Parsley (for decoration) – 2 twigs
- Ground black pepper - to taste
- Salt - to taste
Step-by-step cooking recipe
Peel the quail eggs from the shell and cut into small pieces. Leave one for decoration.
Chop potatoes, carrots, doctor's sausage and cucumbers into cubes of the same size.
Wash the peas under running water and dry them lightly on a paper towel.
In a deep bowl, mix eggs, potatoes, cucumbers, carrots, sausage and peas.
Add ground black pepper, salt and mayonnaise. Gently mix the salad with a spoon.
Using a serving ring, place the olivier on a plate. Garnish with parsley, olives and egg halves.
