Wash the eggs, dry them thoroughly and divide them into whites and yolks.

Beat the yolks with sugar. The mass should turn white and increase in volume.

Separately whisk the whites with salt until sharp peaks.

Sift flour into a wide bowl and mix with baking powder.

Pour the flour into the yolks and mix.

Add the proteins in small portions, gently stirring the dough with a spatula.

Peel the apples, seeds and finely chop them.

Add starch, cinnamon and mix.

Grease the mold with butter, lay out half of the dough and pour in the apples.

Pour over all the remaining dough and smooth it out.

Bake the charlotte for 30-35 minutes at 180 degrees.
