Separate the whites from the yolks, rub the yolks with sugar.

Sift the flour and add to the mixture of sugar and yolks. Whisk until smooth.

Separately whisk the whites with salt into a fluffy foam.

Gently insert the protein foam into the dough, stirring with a wooden spatula from the bottom up.

Prepare the melon: peel and seeds, cut into small cubes or thin slices.

Put the melon on the bottom of the oiled mold, pour the dough.

Bake the charlotte in a preheated 180 °C oven for 40-50 minutes.

Cool the finished cake in the mold, transfer to a dish, sprinkle with powdered sugar.
