There are different ways to prepare a classic Balkan aivar. For example, here is a Serbian version with eggplant and pepper. A very spicy, flavorful, satisfying and easy-to-prepare snack. Be sure to try it on occasion!

Bake the peppers and eggplant in the oven at 200 degrees for 15-20 minutes until scorched.

Put them in a bag, leave for 10 minutes and peel them off.

Chop the vegetables with a knife or pass through a meat grinder. Add the oil.

Boil on low heat for 20 minutes, add salt, sugar and garlic, and cook for another 15 minutes.

Pour in the vinegar and roll the ivar into sterile jars.
