There are many interesting recipes for red gooseberry jelly. It is prepared with and without thickeners, crushed in a blender or rubbed through a sieve. If the presence of seeds and peel is not essential for you, try my option.
Ingredients
- Gooseberry (red) – 2 kg
- Sugar - 1,1 kg
- Lemon juice - 60 ml
- Pectin - 20 g
Step-by-step cooking recipe
Peel the gooseberries, rinse and put them in a saucepan.
Add 1 kg of sugar, cover with a lid and leave overnight.
Mash the berries or chop them with an immersion blender.
Simmer for 5 minutes.
Add lemon juice and pectin mixed with the remaining sugar.
Boil everything together for 5 minutes and close in prepared jars.
