In the best traditions of Georgian cuisine, eggplant with prunes is just a godsend. It is most convenient to make more immediately and then roll them into jars for the winter. And how to properly prepare such a piquant and original snack – read on in the recipe.

Ingredients

  • Eggplant - 2 pieces
  • Prunes - 10 pieces
  • Tomatoes - 4 pieces
  • Vegetable oil - 70 ml
  • Water - 200 ml
  • Vinegar - 1 tbsp.l.
  • Salt - 1 tsp.
  • Garlic - 3 cloves
  • Sugar - 1 tbsp.l.

Step-by-step cooking recipe

Pour boiling water over the prunes for 5 minutes and chop.

Cut eggplant and tomatoes into cubes.

Fry the vegetables in oil for a couple of minutes, add water and simmer for another 20 minutes under the lid.

Add the prunes and simmer for another 20 minutes.

5 minutes before the end, add the chopped garlic and the remaining ingredients.

Roll up the billet for the winter in sterilized jars.
