I propose to replenish my culinary records with another great recipe — cream soup with cauliflower, broccoli and feta. Delicious combination of flavors, creamy texture and mouth-watering aroma!
Ingredients
- Cauliflower - 400 g
- Broccoli - 250 g
- Onion - 1 piece
- Cream (33% fat content) – 5 tbsp.l .
- Vegetable oil - 2 art.l.
- Ground black pepper - to taste
- Salt - to taste
- Feta (for submission) – 100 g
- Parsley (for submission) – 2 twigs
- Chicken broth - 1,5 l
Step-by-step cooking recipe
Divide cauliflower and broccoli into small inflorescences.
Peel the onion from the husk and finely chop.
Boil the broth, add broccoli, cauliflower and cook for 7 minutes. Leave some broccoli to serve.
Heat a frying pan with oil, add the onion and fry until golden brown.
Pour the roast into a saucepan with vegetables and cook for another 7 minutes.
Remove the soup from the heat, puree with an immersion blender until smooth.
Add cream, salt and ground black pepper. Heat over low heat for a couple of minutes, but do not boil.
When serving, add broccoli, parsley and crumbled feta to the plate.
