Fried eggplant is a delicious and satisfying preparation. It is prepared quickly and without additional sterilization. In winter, we opened a jar - a spicy cold snack is already on your table! And if fried eggplants are heated up, you will get an excellent hot dish. Very convenient!

Ingredients

  • Eggplant - 1 kg
  • Garlic - 4 clove
  • Vegetable oil - 200 ml
  • Vinegar (9%) – 3 tsp.
  • Salt - 1 art.l.

Step-by-step cooking recipe

Wash the eggplant and cut into slices. Sprinkle the eggplant circles with salt and put them under pressure for 6-8 hours (you can do it overnight).

Then drain the released liquid, and dry the eggplants with paper towels.

Fry the eggplants in preheated vegetable oil on both sides until a beautiful golden crust.

Tightly fill pre-sterilized jars with fried eggplants. Pour in the hot vegetable oil remaining after frying.

Put the peeled and sliced garlic cloves on top, pour 1 tsp vinegar into each jar.

If there is not enough oil in the jar, boil a little more and add to the jars “on the shoulders". Seal the jars tightly and cool them. Store the cooled workpiece in a cool, dark place.
