Back in 1939, the first recipe for red beet caviar appeared. Then it was cooked with butter and lemon juice. I suggest trying a simpler option. Vegetables can be crushed in a blender or passed through a meat grinder.

Ingredients

  • Beetroot - 2 kg
  • Tomatoes - 500 g
  • Onion - 300 g
  • Garlic - 100 g
  • Vegetable oil - 80 ml
  • Vinegar - 120 ml
  • Ground black pepper - 1 tsp.
  • Sugar - half a glass
  • Salt - 60 g

Step-by-step cooking recipe

Mince tomatoes, peeled beets and onions.

Mix everything in a large saucepan, add sugar, salt and butter.

Boil for 20 minutes, add ground pepper and garlic passed through the press.

Soak for another 5 minutes, pour in the vinegar and remove from the heat after 1 minute.

Fill the prepared jars with hot caviar, roll them up and wrap them with a warm blanket.
