Quince is good for its versatility, so sweet jam with compotes and spicy sauces are made from it. But the sauce usually needs quite a bit, and cooking it every time is not too convenient. So I advise you to immediately roll up a couple of small jars for the winter.
Ingredients
- Quince - 3 pieces
- Sugar - 2 art.l.
- Salt - 0.5 tsp.
- Vinegar - 1 tbsp.l .
- Paprika - 1 tsp.
- Ground coriander - 0.5 tsp.
- Ground black pepper - 3 pinches
- Water - 1 glass
- Lemon juice - 1 tsp.
- Bay leaf - 1 piece
Step-by-step cooking recipe
Peel and finely chop the quince.
Fill with water, add salt, lemon juice and bay leaf, and simmer for 20-30 minutes.
Chop the quince with a blender.
Add the remaining spices and bring to a boil again.
Pour in the vinegar and roll the sauce into sterile jars.
