Pumpkin can be treated in different ways, but the fact that it is a super-healthy vegetable is an indisputable fact. It is necessary to introduce pumpkin into the diet. You can, for example, cook delicious caviar, similar to squash. You won't immediately guess what the main ingredient is here.
Ingredients
- Pumpkin - 700 g
- Onion - 350 g
- Carrots - 350 g
- Garlic - 30 g
- Water - 70 ml
- Tomato paste - 3 tsp.
- Vegetable oil - 50 ml
- Vinegar (9%) – 25 ml
- Salt - to taste
- Ground black pepper - to taste
Step-by-step cooking recipe
Wash the pumpkin, carrot and onion, peel, slice arbitrarily, then alternately pass through a meat grinder.
Fry the onion in preheated vegetable oil for 5 minutes.
Add the carrots to the onion in the pan, stir and simmer for 5-7 minutes.
Also send the pumpkin mass to the carrots and onions, mix well, simmer everything together for 10 minutes, stirring occasionally.
Dilute the tomato paste with water, pour in the vegetable mass, add salt, add pepper, mix everything thoroughly and simmer under the lid for 20 minutes.
5 minutes before cooking, add vinegar and crushed garlic, mix well.
Pack the hot caviar in pre-sterilized jars, seal tightly and cool. Store the cooled workpiece in a cool, dark place.
