I want to share with you a recipe for a delicious and original snack for the winter – Mother-in-law's tongue of baked eggplant. The dish turns out to be very fragrant and juicy, and it's very easy to cook it. It is perfect for decorating a festive table or just for lunch. Try it and you won't regret it!

Ingredients

  • Eggplant - 4 pieces
  • Bell pepper - 4 pieces
  • Spices and seasonings - 1 art.l.
  • Tomato juice - 300 ml
  • Salt - 1 art.l.
  • Sugar - 1 tbsp.l.
  • Vinegar - 1 art.l.
  • Garlic - 4 cloves
  • Greenery - 4 twigs

Step-by-step cooking recipe

Bake the eggplant and pepper in the oven at 180 degrees for about an hour until cooked.

Randomly chop the vegetables and put them in sterilized jars with garlic, herbs and spices.

Boil tomato juice with sugar, salt and vinegar.

Pour the eggplant, sterilize the jars for another 15 minutes and roll up the Mother-in-law's tongue for the winter.
