There are a lot of recipes for mashed mushroom soups, and this is one of my favorite options. It turns out to be very satisfying and flavorful. I advise you to serve it with homemade crackers and decorate with the same coriander and plates of champignons.

Finely chop the mushrooms with onions and fry until golden. Pour in the milk and bring to a boil.
Boil the potatoes in water until tender and puree with a blender.
Add the mushrooms in the milk and chop again.
Dilute the soup-puree with hot cream to taste, season and add chopped coriander.
