Start by making broth. To do this, rinse the meat, separate the veins and excess fat. Cut the meat into pieces and send it to the water. Put it to cook by adding celery, peas and a whole onion to the meat. Add a little salt.

When the meat is cooked, strain the broth and put it back on the fire, and fry the meat until golden brown in a frying pan.

Pour boiling water over the tomatoes, remove the skin and cut into small cubes. Add to the meat and simmer a little.

Add the meat to the broth, cook for 5 minutes. Add the rice and the remaining spices, add salt. Cook until the rice is ready.

A couple of minutes before the end, pass the garlic through the press and add it to the kharcho. Stir and set aside for 5 minutes. Serve hot. You can decorate with fresh herbs and add a slice of lemon.
