It is known that a full meal must necessarily include the first course. Alternatively, you can cook beetroot soup with dumplings. The rich red color, wonderful aroma and taste simply will not leave anyone indifferent.

- Beetroot - 400 g
- Onion - 1 piece
- Celery (stems) – 100 g
- Vegetable oil - 3 tbsp.l .
- Salt - 2 tsp.
- Meat broth - 2,5 l
- Chicken eggs - 1 piece
- Flour - 100 g
- Semolina - 2 art.l.
- Butter - 20 g
- Ground black pepper - to taste
- Salt - 0,5 tsp.
- Water - 3 art.l.
Step-by-step cooking recipe
Peel the beetroot, remove the husk from the onion.
Cut the beetroot into thin cubes, chop the celery and onion.
Heat the oil in a frying pan, add the onion and celery and fry for 4-5 minutes.
Pour the beetroot into the boiling broth, roast and cook for 10 minutes.
In a separate bowl, mix the egg, flour, semolina, salt and ground black pepper.
Pour in the melted butter, warm water and knead the dough of medium density.
With a dessert spoon, form dumplings of the desired size and lower them into boiling soup. Boil everything together for 7 minutes.
Add salt, turn off and leave under the lid for 10 minutes.
