A rabbit is rarely found on our table. That's because it's usually not easy to buy it. But the dishes from this tender meat are incredibly delicious! If you are lucky enough to buy a rabbit at the market, then by all means cook soup from it.

Step-by-step cooking recipe

Pre-rinse the pearl barley and soak it in cold water for 1 hour.

Wash the rabbit meat, cut it into small pieces and place it in a saucepan.

Add the prepared pearl barley, black pepper, cold water and simmer for 1 hour.

Chop asparagus, broccoli, carrots, peeled potatoes and onions.

Fry onions and carrots in oil until golden brown.

Pour potatoes, asparagus, broccoli and roast into a saucepan with rabbit. Cook everything together for 15 minutes.

Add salt, turn off the heat and leave under the lid for 10-15 minutes.
