Today I want to share a recipe for fragrant squash caviar. Cooked at home, caviar turns out to be especially tasty and healthy. It contains vitamins and minerals, which are so lacking in the body in winter.
Ingredients
- Zucchini - 1,2 kg
- Carrots - 2 pcs.
- Tomatoes - 400 g
- Bell pepper - 2 pcs.
- Onion - 2 pcs.
- Garlic - 2 teeth
- Tomato paste - 1 art.l.
- Lemon juice - 1 art.l.
- Vegetable oil - 60 ml
- Ground black pepper - to taste
- Ground coriander - to taste
- Sugar - 1 tbsp.l.
- Salt - 1 art.l.
Step-by-step cooking recipe
Wash all the vegetables, peel them and pass them through a meat grinder one by one.
In preheated vegetable oil, fry the chopped carrots until soft. Add the onion and fry together for 5 minutes.
Add the zucchini passed through the meat grinder to the carrots and onions in the frying pan (the liquid must be squeezed out beforehand) and Bulgarian pepper. Mix everything well and fry until soft.
Add chopped tomatoes, salt, sugar, coriander, black pepper, tomato paste and lemon juice. Mix everything well and simmer over low heat, stirring occasionally, until tender.
A couple of minutes before the end of cooking, add chopped garlic to the caviar, mix.
Pack the boiling squash caviar into pre-sterilized jars, seal tightly, turn upside down and leave to cool completely. Store the cooled workpiece in a cool, dark place.
