Cucumbers in tomato paste are a wonderful preparation for the winter. Use sweet cucumbers as an independent snack, and tomato sauce will be a good addition to various dishes. Cucumbers can be sliced or small fruits can be used entirely.

Ingredients

  • Cucumbers - 1 kg
  • Tomato paste - 140 g
  • Garlic - 4 cloves
  • Bay leaf - 2 pcs.
  • Black Pepper (polka dots) – 8 pcs.
  • Water - 600 ml
  • Salt - 30 g
  • Sugar - 50 g
  • Citric acid - 1/2 tsp.

Step-by-step cooking recipe

Wash cucumbers and cut into circles 1.5-2 cm thick.

Place garlic, bay leaf and peppercorns on the bottom of sterilized jars.

Fill the jars to the top with prepared cucumbers.

Boil water and pour boiling water over cucumbers in jars. Cover the jars with sterile lids and leave for 7-10 minutes. Then drain the water (we won't need it anymore) and repeat the procedure again.

Pour 600 ml of water into a saucepan, add tomato paste, salt, sugar and citric acid. Stir until smooth and bring to a boil over medium heat.

Pour the cucumbers in jars with boiling tomato sauce (do not forget to drain the water beforehand!). Seal the jars tightly, turn them upside down, wrap them up and leave them to cool completely. Store the cooled workpiece in a cool, dark place.
