Any cream soup is immediately transformed if you add coconut milk instead of the usual cream. This time I suggest experimenting with a broccoli dish. And a little mint will give it even more freshness, lightness and originality.
Ingredients
- Broccoli - 1 head
- Potatoes - 2 pieces
- Vegetable broth - 700 ml
- Spices and seasonings - 2 tsp.
- Coconut milk - 100 ml
- Mint - 3 twigs
- Garlic - 4 cloves
- Parsley - 4 twigs
Step-by-step cooking recipe
Boil broccoli and potatoes in vegetable broth and chop with a blender.
Add the garlic and all the herbs there, and chop again.
Pour in the coconut milk to the desired consistency, warm up the soup and season.
