For this recipe, you will need five main ingredients: eggplant, bell pepper, carrots, tomatoes and onions. For this reason, the eggplant salad is called "Pyaterochka". It should be cooked in a wide saucepan or saucepan of a suitable size.
Ingredients
- Eggplant - 1 kg
- Bell pepper - 1 kg
- Tomatoes - 1,5 kg
- Carrots - 1 kg
- Onion - 1 kg
- Vegetable oil (odorless) – 180 ml
- Vinegar - 100 ml
- Ground coriander - to taste
- Ground black pepper - to taste
- Sugar - 150 g
- Salt - 120 g
Step-by-step cooking recipe
Prepare and chop the vegetables.
Put the eggplants in a separate container and pour salted water for 15 minutes.
In a deep saucepan, lay out layers of carrots, onions, tomatoes, bell peppers and eggplants.
Pour oil, sprinkle with salt, sugar, spices and simmer for 30 minutes under the lid.
Pour in the vinegar, mix gently and remove from the heat after 1 minute.
Arrange the salad in the prepared jars, roll it up, turn it upside down and wrap it with a thick towel.
