Eggplants have a wonderful property of absorbing tastes and aromas. For this they are also called "fake mushrooms". Prepare an eggplant salad and you will see how simple and delicious it is! I share a proven recipe.
Ingredients
- Eggplant - 1 kg
- Bell pepper - 1 kg
- Carrots - 500 g
- Onion - 500 g
- Vegetable oil - 100 ml
- Vinegar - 120 ml
- Ground black pepper - 0,5 tsp.
- Ground coriander - 0,5 tsp.
- Salt - 60 g
Step-by-step cooking recipe
Peel the eggplants, cut into small pieces and pour salted water for 15 minutes.
Peel and slice the bell peppers and onions. Grate the carrots.
Mix everything in a large saucepan, add salt, spices and oil. Cover with a lid and leave for 30 minutes.
Simmer for 20 minutes, pour in the vinegar and immediately remove from the heat.
Arrange the salad in sterilized jars, roll up and turn upside down.
