I use this recipe every year and am always happy with the results. Vegetable caviar is cooked quickly through a meat grinder, it turns out delicious and tender. If desired, zucchini can be replaced with eggplant, and tomato juice can be used instead of tomatoes.

Prepare the vegetables and put them through a meat grinder.

Fry the onion in oil until transparent.

Add the carrots and simmer for 5-7 minutes.

Add bell pepper, spices and cook for another 10 minutes, stirring occasionally.

Add zucchini, tomatoes, garlic and salt. Cover with a lid and simmer all together for 15 minutes.

Pour in the vinegar, stir and remove from the heat.

Put the hot caviar in jars, roll it up and wrap it up for a day with a warm blanket.
