After spending a little time, you can easily cook eggplants like mushrooms with garlic. A fragrant snack can be put on a festive table, served with ordinary pasta and porridge. Fresh herbs and onions are often added to the finished salad.

Ingredients

  • Eggplant - 2 kg
  • Garlic - 100 g
  • Vegetable oil (odorless) – 120 ml
  • Vinegar - 100 ml
  • Bay leaf - 2 pieces
  • Allspice - 4 peas
  • Salt - 1 art.l.
  • Water - 4 l

Step-by-step cooking recipe

Mix water, salt and spices, bring to a boil.

Cut the eggplants and pour them into a saucepan with boiling brine.

Boil for 5 minutes, fish with a slotted spoon and put in a large bowl.

Add oil, vinegar, garlic passed through the press and mix well.

Arrange the vegetables in the prepared jars.

Sterilize for 10 minutes and roll up.
