Ingredients
- Eggplant - 1 kg
- Onion - 400 g
- Vegetable oil - 100 ml
- Tomato paste - 50 g
- Garlic - 2 clove
- Salt - 1 tsp.
- Sugar - 1 tsp.
- Apple cider vinegar - 1 tsp.
Step-by-step cooking recipe
Bake the eggplants in the oven for about 30-40 minutes at 220-240 degrees.
Peel them and chop them finely.
Separately chop the onion and fry in oil until browned.
Add tomato, salt and sugar, and simmer for another 7-8 minutes.
Add the eggplant and simmer for another 5 minutes.
Add crushed garlic, pour in vinegar and simmer the caviar for another 5 minutes.
Roll it up in sterilized jars.
