I offer you another option of canned eggplant snacks for the winter. The recipe is without sterilization, everything is prepared quickly and very simply. Even a beginner can handle it! This preparation will diversify your menu and will be a delicious addition to many dishes.

Ingredients

  • Eggplant - 1 kg
  • Tomatoes - 1,5 kg
  • Garlic - 1 head
  • Vegetable oil - 4 tbsp.l.
  • Vinegar (9%) – 1 art.l.
  • Sugar - 3 tbsp.l.
  • Salt - 1 art.l.

Step-by-step cooking recipe

Wash the tomatoes, peel them, cut them arbitrarily, then pass them through a meat grinder or chop them with a blender.

Cut eggplant into cubes of medium thickness.

Put the tomato mass in a saucepan, bring to a boil and boil over low heat, stirring, for 15 minutes.

Place the prepared eggplants in the boiling tomato mass, add salt, sugar and vegetable oil. Mix everything well and boil over low heat for half an hour.

5 minutes before cooking, add vinegar and crushed garlic.

Pack the boiling billet into pre-sterilized jars, seal tightly, turn upside down, wrap it up and leave it to cool completely. Store the cooled eggplants in a cool, dark place.
