Beetroot in a jar is a favorite preparation for the winter by many housewives. It is harvested for the preparation of fragrant first courses in winter (it is also suitable for borscht!). Just add the contents of the jar to the boiling broth and cook the dish according to the recipe.
Ingredients
- Beetroot - 2 kg
- Carrots - 1 kg
- Onion - 1 kg
- Bell pepper - 1 kg
- Chili pepper - 1 pcs.
- Vegetable oil - 500 ml
- Vinegar (9%) – 12 art.l.
- Salt - to taste
- Sugar - 9 art.l.
Step-by-step cooking recipe
Wash and peel the vegetables. Grate beets and carrots on a coarse grater, onion, bell pepper and chili cut into small cubes.
In a cooking pot, combine the prepared vegetables, add salt, add sugar and sunflower oil, bring to a boil and cook over low heat under the lid for 60-80 minutes, stirring occasionally.
Add vinegar, stir and boil for another 10 minutes.
Pack the boiling billet into pre-sterilized jars, seal tightly, turn upside down and cool. Store the cooled beetroot preparation in a cool, dark place.
