Cut the plums in half, remove the seeds.

Cut the hot pepper lengthwise and peel off the seeds.

Disassemble the garlic into cloves and peel off the husk.

Chop the plums, hot pepper and garlic in a blender.

Add cumin, salt and cook for 20 minutes over low heat, stirring frequently.

Pour in the vinegar, stir and immediately remove from the heat.

Spread the hot adjika into jars and roll it up.
