It's actually not quite right to call this soup a pickle, because it's not a classic Russian recipe. This is an original Czech dish with potatoes and cream. But still, it is based again on pickles and brine from them.
Ingredients
- Chicken broth - 1.5 l
- Cream - 200 ml
- Potatoes - 500 g
- Pickled cucumbers (gherkins) – 200 g
- Cucumber pickle - 100 ml
- Onion - 2 pieces
- Flour - 1 art.l.
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Finely chop the onion, fry until soft, add flour and mix.
Add the chopped potatoes to the boiling broth and boil until tender.
Send onions, cream and spices there. Boil for 2 minutes. Add cheese if desired.
Pour in the brine and add the sliced cucumbers. Season the soup to taste and bring it back to a boil. Remove from the heat.
