Classic tkemali is made on the basis of plum, but there are also different regional variations. For example, here is an original recipe with grapes. I advise you to choose dark sweet varieties and get rid of the seeds.
Ingredients
- Grapes - 2 kg
- Wine vinegar - 500 ml
- Ginger (grated) – 1 tbsp.l .
- Carnation (ground) – 0.5 tsp.
- Chili pepper - 1 piece
- Ground black pepper - 0.5 tsp.
- Garlic - 2 cloves
- Sugar - 2 glasses
Step-by-step cooking recipe
Chop the grapes in a blender and boil the puree for 20 minutes.
Add vinegar, bring to a boil and let the workpiece cool.
Rub the sauce through a sieve and add chopped garlic, sugar and spices.
Bring to a boil and cook for half an hour on low heat.
Roll up the tkemali from grapes in sterile jars.
