Soak the beans for 6-8 hours, and then put them in a saucepan with cold water and boil for 40 minutes.
Grate carrots and peeled beets.
Chop the cabbage and peeled onion.
Fry onions and carrots in oil for 10 minutes.
Add beets, spices and simmer for 15 minutes.
Add cabbage, beans, citric acid, salt and sugar.
Mix the tomato paste with a small amount of broth that was left after the beans. Pour into a saucepan with vegetables and simmer for 20 minutes under the lid.
Spread the borscht dressing into the prepared jars and roll up.
