Peel the eggplants, slice and pour salted water for 15 minutes.

Chop cucumbers, peeled onions and bell peppers.

Mix all the vegetables in a large saucepan, add butter, sugar and salt.

Simmer on low heat for 30 minutes. Stir more intensively towards the end of cooking.

Add vinegar, stir and immediately remove from heat.

Arrange the salad in the prepared jars, roll up and turn upside down.
