If you love eggplant, but want to try something new, then this recipe is for you. I use fresh blueberries and spices to create a taste reminiscent of pears. They can be used as an independent snack or added to various dishes.

Ingredients

  • Eggplant - 1 kg
  • Garlic - 7 teeth
  • Dill - 0.5 beam
  • Salt - 1.5 tbsp.l .
  • Sugar - 1 art.l.
  • Vinegar - 50 ml
  • Water - 1 l
  • Allspice - 5 peas
  • Vegetable oil - 60 ml
  • Bay leaf - 2 pieces
  • Coriander - 2 pinches

Step-by-step cooking recipe

Cut eggplant into cubes. If they are bitter, salt them, leave them for half an hour and rinse.

Chop the dill and garlic.

Boil the water with all the remaining ingredients.

Put the eggplants in the marinade and cook for 5 minutes after re-boiling.

Add garlic and dill, and roll the eggplant in marinade into sterile jars.
