Imagine what a sensation homemade ketchup with prunes and tomatoes will make on the festive table. It harmoniously complements meat and fish dishes. Be sure to prepare a couple of jars of this delicious sauce for the winter.
Ingredients
- Tomatoes - 3 kg
- Prunes (without pits) – 200 g
- Garlic - 5 teeth
- Basil - 5 twigs
- Olive oil - 3 art.l.
- Vinegar - 3 tbsp.l.
- Ground black pepper - 0,5 tsp.
- Ground coriander - 0,5 tsp.
- Sugar - 2 tbsp.l.
- Salt - 2 art.l.
Step-by-step cooking recipe
Rinse the prunes, pour boiling water and cover for 15 minutes.
Drain the water and dry the prunes with a paper towel.
Peel the tomatoes and chop them in a blender.
Add the prunes and turn on the blender for another 40-60 seconds.
Finely chop the basil leaves and peeled garlic.
Mix all the blanks in a large saucepan with a thick bottom.
Add sugar, salt, spices, oil and cook for 15 minutes on low heat.
Pour in the vinegar, stir and remove from the heat after 1 minute.
Pour the hot ketchup into sterilized jars and roll it up.
