Berry marshmallows are a pleasure, because there is a lot of pectin in the berry, and its sourness perfectly balances the sweetness of the treat. Homemade blueberry marshmallows are my favorite treat for tea, and today I would like to share this recipe with you.
Ingredients
- Blueberries - 300 g
- Egg whites - 1 piece
- Water - 75 ml
- Sugar - 300 g
- Agar-agar - 5 g
Step-by-step cooking recipe
Chop the blueberries with a blender.
Boil the puree 2 times over low heat and rub through a sieve.
Add 100 g of sugar, stir until dissolved and let the puree cool under the film.
Beat the puree with a mixer with protein until fluffy.
Mix water, agar-agar and 200 g of sugar. Bring to a boil and boil for 3-5 minutes.
Continuing to beat the protein mass, pour in the syrup in a thin stream.
Put the marshmallows on the film with a pastry syringe and let it freeze.
