There are different technologies for making marshmallows for every taste, and one of them is custard marshmallows. This is the recipe I would like to share with you this time. It turns out much better than the store, and the guests will not even immediately guess that you made it yourself.
Ingredients
- Egg whites - 2 pieces
- Citric acid - 0.3 tsp.
- Sugar - 350 g
- Water - 100 ml
- Agar-agar - 9 g
- Applesauce - 150 g
Step-by-step cooking recipe
Mix fruit puree, water, 270 g of sugar and agar-agar.
Bring to a boil and cook for 5-6 minutes on low heat, stirring.
Whisk the whites to persistent peaks, gradually increasing the speed. In the process, add the remaining sugar.
Add citric acid at the end.
Continuing to beat at medium speed, pour in a thin stream of hot syrup.
Whisk everything together for another minute.
Put the marshmallows on parchment with a pastry syringe and let it freeze in a dry room for about an hour.
